Description

Patriotic Poke Cake is a fun and festive dessert featuring a soft white or yellow cake infused with red and blue gelatin for a colorful surprise in every bite. Topped with fluffy whipped cream and festive sprinkles or fruit, it’s perfect for Fourth of July or Memorial Day celebrations.


Ingredients

1 box white or yellow cake mix

1 packet red gelatin (cherry or strawberry)

1 packet blue gelatin

2 cups boiling water (1 cup per gelatin)

1 container whipped topping

Red, white, and blue sprinkles or fruit


Instructions

1. Bake cake according to package directions in a 9×13” pan. Let cool.

2. Poke holes across cooled cake with the back of a spoon.

3. Prepare each gelatin with 1 cup boiling water. Pour red and blue into alternate holes.

4. Chill cake for 2+ hours.

5. Top with whipped cream and decorate before serving.

Notes

For added flair, layer the top with sliced strawberries and blueberries instead of sprinkles.

You can use sugar-free gelatin for a lighter version.

Make sure the cake is completely cool before adding gelatin for best absorption.
