Description
A simple, high-protein flatbread made with just cottage cheese and eggs. Perfect for wraps or sandwiches.
Ingredients
250g (1 cup) cottage cheese
2 eggs
Garlic powder, to season (optional)
Instructions
1. Preheat oven to 220C/200C fan forced. Line a baking tray with baking paper and spray paper with oil.
2. Place the cottage cheese and eggs in a bowl. Season with salt and pepper, and the garlic powder, if using. Mix until well combined.
3. Pour mixture onto the prepared tray and use the back of a spoon or spatula to spread thinly into a circle shape. Bake for 20 minutes or until lightly browned. Set aside for 5 minutes to cool.
4. Fill the flatbread with desired fillings, to serve.
Notes
This flatbread is very versatile. Try filling it with fresh salad, deli meats, or roasted vegetables.
For extra flavor, sprinkle herbs or grated cheese over the top before baking.
